Gluten Free Crock Pot Pulled Pork

Pulled pork in the crock pot, fast, easy to make first thing in the morning, and done when you’re ready to eat.

Do you have a busy day? You’re probably busy every day, but do you have that one super busy day? This semester, ours is Tuesday. We pack school in in the morning and we’re out of the house for most of the rest of the day. We don’t get home until right at supper time (or later). Pulled pork has become my favorite Tuesday meal (so much better than picking a pizza up for the gluten eaters and then watching them while I eat my banana). Served on a gluten free roll with some fruit or a salad on the side, it’s an “instant” meal when we walk in the door, and it only takes 2 minutes to put together in the crock pot in the morning. Because, seriously, when you have a busy day, you don’t really want to spend an extra hour in the morning making a complicated crock pot meal. I only use mild spices and I don’t cook the roast with bbq sauce. I find that bbq sauce loses its flavor in the crock pot, and I have a five year old who won’t eat things with sauce. Not even amazing sauce.
My crock pot seems to cook cool, so I always cook pork roast on high. The crock pot keeps it moist. The cooking times are the standard crock pot cooking times, but they can vary based on your crock pot and the size of your roast. I usually buy pork loin on sale, but this will work with any boneless pork roast.

Gluten Free Crock Pot Pulled Pork

Ingredients

  • Boneless pork roast or pork loin
  • 1 T garlic powder
  • 1/2 T cumin powder
  • 3 tsp sea salt or more to taste

Instructions

  1. Place pork roast into crock pot and season with spices and salt.
  2. Cook on high for 4-6 hours or on low for 6-8 hours or until tender and easily shredded.
  3. Using two forks, shred pork into strings.
  4. Serve on gluten free rolls or toast, top with your favorite gluten free bbq sauce if desired.
