Gluten Free Cookies and Cream Hello Dollie Bars

A super easy gluten free dessert with only four ingredients. These are very rich.

Ingredients

  • 15 gluten free vanilla creme cookies
  • 1 ½ cup chocolate chips
  • 1 ½ cup shredded coconut
  • 1 15 oz can sweetened condensed milk

Instructions

  1. In a food processor, crush the cookies until they become crumbs. I use a Ninja Pulse
  2. Press the cookie crumbs into the bottom of a parchment lined 9x9” pan.
  3. Sprinkle the chocolate chips on top of the crust in an even layer.
  4. Sprinkle the coconut on top of the chocolate chips in an even layer.
  5. Pour the sweetened condensed milk evenly over the coconut.
  6. ***DO NOT STIR***
  7. Bake at 400F for 15-20 minutes or until the edges and top start to brown.
  8. Let cool completely.
  9. Refrigerate until firm.
  10. Cut into squares and serve.
