Gluten Free, Peanut Free Trail Mix Cookies with SunButter

A gluten free, nut free cookie that tastes like summer!

Ingredients

  • 1 cup SunButter
  • 1 egg
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp vanilla
  • 1/2-2/3 cup mini chocolate chips
  • 1 cup gluten free Rice Krispies

Instructions

  1. Cream together Sun Butter, egg, sugars and vanilla with an electric mixer until they form a stiff dough.
  2. Stir in chocolate chips and Rice Krispies.

For Cookies:

  1. Form into balls about 2 tablespoons big, place on a parchment lined baking sheet and gently flatten.
  2. Bake at 350F for 10-12 minutes until edges start to brown.
  3. Remove from oven and let cool completely before removing from cookie sheet. (I find the cookies are mushy when warm, texture dramatically improves after cooling)

For Squares:

  1. Press into a parchment lined 9 inch square cake pan.
  2. Bake at 350F for about 15-18 minutes.
  3. Remove from oven.
  4. Score with knife while still hot.
  5. Let cool completely before serving.
