I’ve been experimenting with flourless waffles trying to find an inexpensive, flavorless substitute for gluten free toast. I’ve tried peanut butter and almonds and cashews, but in Bangkok peanut butter and almonds and cashews are really expensive. Finally I realized that I could use peanuts the same way I’ve been trying to use nuts and peanut butter. And for some reason, peanuts here are really cheap. So I now have an abundance of peanutty waffles in the freezer ready to reheat in the waffle maker. These aren’t the flavorless toast success I was hoping for, you can really taste the peanut in these, but they’d be a good base for a chicken satay and peanut sauce sandwich and what could be better for peanut butter and jelly than a peanut waffle.
Gluten Free Peanut Flour Waffles
- 1 cup finely ground peanuts
- 4 eggs
- 1/4 cup oil
- 1 tsp baking powder
- 1/2 tsp salt
- 2tsps – 2 Tablespoons of sugar (depending if you want a sweet breakfasty waffle or not)
- optional 1 tsp vanilla

Peanut flour? I have never seen that!! That sounds yummy! I’m going to have to search for that!! Maybe make my own??

Thanks for stopping by! I’ve never seen it in stores, I just make my own in my flat blade blender. Just like home made almond meal.
