Corn muffins are standard American fare, and when you go gluten free, you miss them!! Add other food issues like avoiding dairy or eggs, and bam, they seem like they’re disappearing in the rear view mirror. These gluten free, vegan corn muffins bring them back into sight. They’re egg-free, dairy-free, and use applesauce instead of oil. All while tasting like corn muffins! They won’t be perfect for everyone, but hopefully they’ll be perfect for you! Why I love these gluten free, vegan corn muffins Corn muffins are easy to whip up, and great for making anything a meal. Just have soup? Make some corn muffins and now you have a…

Garlic and Herb Polenta – gluten free, vegan
Guys!! This polenta is so good!! Like steal-out-of-the-fridge good! Normal polenta is pretty decent all on its own. It’s soft and salty and has that little bit of texture from the bigger pieces of grits, but this garlic herb polenta takes it up a notch. It takes it up seven notches. In addition to being a great base for sauces and stews like regular polenta, this has such a great flavor, it’s fantastic all on its own. How To Serve Polenta Ok, the dilemma is, you see a polenta recipe. You think, gee that looks like an easy thing to make, and cheap! Wow! But how in the heck do…

Stove Top Pressure Cooker Pinto Beans – Gluten Free and Vegan
Pinto beans are one of my very favorite vegan protein sources. Not only do they have an amazing flavor and texture all on their own, they’re so versatile. I put them in soups, pasta, tacos, and on polenta or baked potatoes. This recipe gives them a savory flavor that mixes well into many different dishes. If You Have An Electric Pressure Cooker I make these in a stovetop pressure cooker. If you have an Instant Pot or other electric pressure cooker, just follow your cooking times for soaked pinto beans. They may take a little longer than this recipe because electric pressure cookers cook at a slightly lower temperature than…

Easy Gluten Free, Vegan Mincemeat Pie Filling
I love mincemeat pie. Like love love. It’s one of those great UK dessert dishes that makes use of a whole bunch of random dried fruits and makes them taste amazing. (If you love this type of recipe, or you just love dried fruit and you also love chocolate, try my gluten free, vegan version of tiffin, another traditional dessert from the UK) You can see the original mincemeat pie recipe being developed by some resourceful cook who just found out she’s having company. Let’s see, what do we have here, apples, dried fruit, sugar, and what the heck, let’s throw in some booze. Now we’ll put it in little…

Gluten Free & Vegan Crispy Date Balls – Dairy Free, Egg Free
Date balls are a Christmas tradition from the era when people did Christmas visiting. At the beginning of the season, all the moms and grandmothers would make up a billion different squares and cookies and put them in the fridge or freezer to be served to company. Then they would all rotate through the different houses of their friends and family, and the lady of the house would pull out a big tray of all these different desserts. The date balls are one of my very favorites. They’re also one of the fastest and easiest to make. For years I made the traditional recipe, which calls for an egg, but…

Gluten Free & Vegan Tiffin
What is Tiffin? It’s a mixture of crumbled cookies and dried fruit coated in chocolate and pressed into a pan to harden. Some people call it fridge-cake. It’s originally from Scotland. How are these UK people so resourceful with their desserts? Nothing goes to waste! Stale cake? Make trifle! Stale cookies? Make tiffin! You can really make tiffin with any combination of dried fruits and cookies. Most often it’s made with digestive biscuits and raisins, and if your Scottish grandmother made it, her recipe probably includes “a few handfuls of stale biscuits and a handful of raisins” but I made this Christmasy with ginger snaps, cranberries, and pecans. Many people…

Easy White Bean Chili – Gluten Free & Vegan
This is a fantastic and easy white bean chili soup. It’s gluten free and vegan, but will please even your gluten loving carnivore. Almost all the ingredients are pre-chopped and measured, so it’s just a matter of adding them to a pot. The directions are there to help you out, but honestly, almost the entire recipe is open cans, open bags, dump in pot, boil. You have to blend two tomatillos, but this step takes about 30 seconds. The timed out directions might give you slightly better results (like warming the cumin first) but aren’t really that necessary, so don’t overthink it or throw the whole thing out if you…

Gluten Free, Vegan, Chocolate Cake – Dairy Free, Egg Free
Hey friends!! I think you will really like this one. It’s simple, fairly inexpensive, and totally impressive. A gluten free, vegan, chocolate cake that actually tastes like a cake. It’s moist, and flavorful, and chocolatey, and cakey. There are no eggs, butter, or milk in it. And you can not tell. The regular version of this recipe is often called Depression Chocolate Cake. It was originally created for a world going through the Great Depression where staples like eggs, butter, and milk were scarce. It’s surprisingly amazing. Our fore-mothers were obvious geniuses in the kitchen. This version uses any cup-for-cup type gluten free flour for the same surprising amazingness. I’ve…

Easy Chickpea Nachos for One – Gluten Free and Vegan
When my twins were little, I pretty much lived on nachos. They were fast, easy, and they felt more like “real food” than the random pieces of toast or handfuls of other things I could quickly grab while chasing babies. Twenty two years later, I still love nachos. I have more time now, so I make better food choices (mostly), but when I treat myself, I want it to feel like a treat. These nachos are naturally gluten free, and switching out the cheese for a non dairy cheese shred like Daiya cheese makes them vegan. I also add chickpeas because, in addition to a protein boost, they honestly add…

Gluten Free, Vegan Pico de Gallo
About a mile down our road is a garage that once a year turns into the most amazing vegetable stand I’ve ever seen. Mr. Homer is famous for his tomatoes. He also sells squash and cucumbers and a few other things, but people go there for the tomatoes. In his garage are long tables with hundreds of tomatoes. He sells the beautiful ones for $2/lb, and the “canning” tomatoes for $1/lb. The canning tomatoes are also beautiful, just maybe less so, and they are perfect for cutting up into homemade pico de gallo. Pico de gallo, or fresh salsa, is the perfect summer side/garnish. We eat it with chips, or…
