Friday was another one of those crazy days. Holiday party the night before, woke up with the 3 year old (never good, no mom-coffee-alone time), ate sugar and grains and iodized salt the night before, and was way, way too irritable to be around all the people I’m required to be around (or rather, on days like this, are required to be around me).
So, even though I’m planning on fasting for a few days next week to get all the poison out of me, I really wanted some comfort food. I’m totally spoiled, so I needed something that made me feel fancy (despite rocking the sweat pants all day) and didn’t make me any sicker than I’d already made myself. And that I could make in like, five minutes.
So I decided to combine the ideas of three dishes, baked eggs and cream, fried eggs and cheese, and Eggs Benedict (the lemon juice makes it taste like homemade holandaise sauce). Totally easy to make, very delicious and saucy, and would be great on a gluten free English muffin or toast. (Note for the purists, this is NOT Eggs Benedict. But it really does taste alot like it, with way less whisking. 🙂
Gluten Free Easy Cheesy “Eggs Benedict”

Ingredients:
- 2 eggs
- 1/3 cup heavy cream
- 1-2T grated cheese (optional)
- 2tsp lemon juice
- Salt to taste
- 1/4 T Butter for cooking
Directions:
- Melt butter in a non-stick skillet with a lid, add eggs.
- Pour cream over and around eggs and top eggs with cheese.
- Place lid on skillet.
- Cook over medium heat until eggs are set to your liking.
- Spoon cream over eggs.
- Drizzle with lemon juice.
