Vegan Mug Cake – Rich, Chocolaty, and Gluten Free!

This vegan mug cake is rich, chocolaty and amazing and oh so easy to make! You’ll use Gluten Free Bisquick, so it’s gluten free too! 

Mug cakes were all the rage 3 or 4 years ago. They became so popular, the big brands all came out with their own versions. Ready little mixes for you to add to your own mug. Unfortunately, there aren’t a lot of vegan or gluten free mug cake varieties. This recipe is both! 

It’s just as fast and easy and tasty as a regular mug cake. Just add a few ingredients to a cup, mix it up, microwave, and enjoy. (Really enjoy.)

 My favorite thing about this vegan mug cake is that I always have the ingredients on hand. Gluten Free Bisquick, cocoa powder, sugar, oil, and soy milk are always things I have lying around. That means I’m only ever 3 minutes away from a cake. Probably a dangerous place to be.

Ingredients

Gluten Free Bisquick

Gluten Free Bisquick is just an amazing product. The original Bisquick was designed to make baking faster and easier by mixing the baking soda in, and the gluten free version takes it a step further by including the xanthan gum that binds gluten free baking. This makes it perfect for quick gluten free and even gluten free and vegan treats.  And since you have a box now, you should also try my pancakes.

Sugar

Just regular white granulated sugar in this! Nothing fancy! 

Soy Milk

I’ve made this recipe with soy milk, oat milk and Ripple Milk. You can use sweetened or unsweetened, whatever you have on hand. Sweetened will obviously make it sweeter. That might be good. You could even try vanilla non-dairy milk.

Cocoa Powder

This is the chocolate part! You don’t need a lot, but this mug cake is chocolaty!! 

Vegetable Oil

Could this recipe be any easier? You can use any unflavored cooking oil. I use the store brand “vegetable oil”, but you can use soy oil, peanut oil, canola oil, or sunflower oil. 

Non-Dairy Chocolate Chips

If you have them, throw some in! They’ll be great! But they’re not totally necessary.

Ingredients

  • ¼ cup Gluten Free Bisquick
  • ¼ cup Sugar
  • ¼ cup Non-Dairy Milk
  • 2T Cocoa Powder
  • 1T Vegetable Oil
  • 2T Non-Dairy Chocolate Chips (Optional)

Instructions

  1. Combine all ingredients in a large mug.
  2. Microwave on high for about 2 minutes.
  3. Enjoy!
