Dining out while gluten free can be very stressful. At least it’s stressful for me. Scouring the internet for gluten-friendly restaurants, grilling the waitress when ordering, inspecting the plate for any signs of crumbs or stray noodles (it’s happened!) and still getting sick from something that happened in the kitchen that I had no control over. One of the biggest problems with having Celiac Disease or Gluten Intolerance is getting accidentally glutened. This is usually followed (for me anyway) by days of joint pain, bloating and nausea, brain fog and a lowered immune system. A juice cleanse really helps me recover. So, I might have mentioned, there are a few different eating needs and tastes in our home. Out of the 6 of us, we have three gluten free, one coconut allergic, one almond allergic, one vegetarian for health reasons, one with an intolerance to most raw vegetables, one legume allergic, almost forgot the citrus allergy, and a ten year old that wants to eat “normal food” and a three year old that wants to live on marshmallows and cornflakes. (I personally will usually avoid grains, but will make them for the rest of the family and eat them when they’re cheese grits. Two of us are actually lactose intolerant, but mildly enough that Lactaid pills work well.) Making sure everyone gets something to eat isn’t the problem. It’s making sure everyone eats real food every day, because everyone will eat microwave s’mores or cookies or Glutino chocolate pretzels or grab themselves some chips and salsa. Continue reading

So, my daughter took this amazing picture of the Target Brownie she bought from an antique shop. It’s one of those dark moody pictures, with the Brownie camera sitting on a dark wood table with a black backdrop. It looks mysterious and smokey. I loved it so much I made it my computer desktop. I just have to say it. Cheesecake impresses people. If you’re having someone over for dinner, and you want to impress them, make cheesecake for dessert. Seriously. Cheesecake belongs to that group of food that are super easy to make, but really impress people. If you want to have the easiest most impressive meal ever, start with homemade soup or a salad with homemade dressing, add a roast chicken and make sure you make baked potatoes, and then end with this cheesecake.
